YPSILANTI, MI -- Restaurants may have lost a lot in sales this year due to the coronavirus pandemic restrictions. But Ypsilanti’s Maiz Mexican Cantina still has been busy.
The restaurant stuck its footprint in Depot Town seven years ago and owner Jason Branham said the Taco Tuesday special, along with ample carryout margarita sales, has kept customers flowing in and his staff employed.
“Taco Tuesday can get a little crazy. They’re $2 à la carte, mix and match,” Branham said.
Before the pandemic, Branham said he would sell about 3,000 tacos on a Tuesday. Now, Maiz is capping it at about 1,500.
“It’s such a monster that on Tuesdays, we set up our kitchen line differently because it’s so skewed toward tacos,” Branham said.
Beyond tacos, Maiz is known for its four specialty burritos, particularly the California club, which is packed with black beans, grilled chicken, rice, cheese, bacon, avocado and onion, covered in rojas sauce and topped with lettuce, tomato and crema.
The other favorite is the ultimate veggie burrito, which has black beans, rice, cheese, potato-zucchini hash, sautéed spinach, roasted mushrooms and corn covered in cheese and rojas sauce and topped with lettuce, tomato, crema and avocado.
“Part of what makes us so popular is we approach vegetarian items differently,” Branham said. “The vast majority of Mexican restaurants offer meatless options and you’re stuck with bean and cheese, whereas we have a spinach and mustard filling.”
Maiz also has a hearty corn salsa, which is often paired with the veggie burrito.
“It’s really a super good option right now because we bake them in a foil tin in the oven and send it out that way. It’s a nice way to reheat as well,” Branham said.
Maiz also features an extensive menu of fajitas, quesadillas and enchiladas, and 10 different margarita mixes, which helped keep sales up, Branham said.
For dessert, the restaurant makes a homemade flan in traditional for, but Branham will occasionally offer a twist.
“It might have a chocolate cake base,” Branham said. “In November, we did a pumpkin flan. We just did an Oreo one. But our actual top-selling desert is the fried Oreos served with ice cream, chocolate and whipped cream.”
Maiz also rolled out “finish-at-home-meals” prepared cold meals people can pick up and reheat at home. They currently offer a tamale dinner, enchilada-baked casserole and sheet pan nachos.
Maiz is offering carryout only until further notice. The restaurant does not currently offer delivery service, despite delivery companies posting the restaurant on their websites, Branham said.
