Four years removed from his life as a chef with the U.S. Coast Guard, Mike Voeller and his wife, Rachel, have realized a dream many years in the making with Gather Brewing Co.
Housed in the former Da Bunker Bar across from the main entrance to Randolph Air Force Base in Universal City, the brewpub is a project the couple began making plans for shortly after returning to Rachel’s native San Antonio once Mike separated from the military.
Taking the culinary experience he gained in the Coast Guard, Mike curated an eclectic menu that features main dishes like a boar burger, which is a house-ground pork and bacon smash patty plus a quarter-pound beef patty topped with porter caramelized onions, the braised Korean brisket tacos that are served on blue corn tortillas and the fan-favorite Korean chicken sandwich. This delectable delight elevates your everyday fried chicken sandwich by pickle brining the chicken breast before adding a Gochujang glaze and topping it with Kimchi slaw, Sunomono pickled cucumber and cilantro. The grilled brioche bun it’s served on seals the deal.
On the beer side of the menu, Gather features a diverse selection with styles ranging from Belgian-style triple and quadruple ales to a milkshake IPA and an amber lager (aptly named the Universal City Lager). Though the Voellers tend toward more traditional beer styles, beer fans that like modern takes on their favorite malted beverage will find options, as well.
The couple’s original plans for opening were delayed by COVID lock downs, but that didn’t stop them from testing their concept before officially debuting their taproom, kitchen and spacious patio in December 2021.
Mike honed his recipes, and he and Rachel worked to get the word out about Gather by hosting pop-ups outside the brewery in 2021 while renovations inside the building were taking place. Their work to perfect the menu is evident, whether you’re stopping for dinner and a drink or simply an appetizer to accompany a flight of beer.
